Pressure cooker ham and broccoli casserole
Using the saute mode, cook the onion and butter until the onion is softened. About 3-5 minutes.
Stir in the garlic and then turn off the saute mode.
Add the chicken broth, salt, and rice. But do not stir.
Place the pressure cooker lid and cook for 10 minutes. Once done, do a quick release.
Stir in the broccoli and ham.
Replace the pressure cooker lid and allow the cooker to “keep warm” for about 10-15 minutes, or until the broccoli has softened.
Stir in the sour cream and 1 3/4 cups of the cheese.
Sprinkle the remaining cheese onto the top and place the lid back on. Let sit until the cheese melts and the remaining water is absorbed.

Ingredients
- 1 ½ cup white rice
- 1 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 2 cups diced ham
- 4 cups fresh broccoli florets, cut into equal pieces
- ½ cup sour cream
- Salt and pepper, to taste
Instructions
- Using the saute mode, cook the onion and butter until the onion is softened. About 3-5 minutes.
- Stir in the garlic and then turn off the saute mode.
- Add the chicken broth, salt, and rice. But do not stir.
- Place the pressure cooker lid and cook for 10 minutes.
- Once done, do a quick release.
- Stir in the broccoli and ham.
- Replace the pressure cooker lid and allow the cooker to "keep warm" for about 10-15 minutes, or until the broccoli has softened.
- Stir in the sour cream and 1 3/4 cups of the cheese.
- Sprinkle the remaining cheese onto the top and place the lid back on. Let sit until the cheese melts and the remaining water is absorbed.
