One of my favorite side dishes is sweet potatoes. And there are so many delicious ways to enjoy this yummy dish aside from sweet potato casserole. Like this fun recipe for roasted diced sweet potatoes with bacon. It combines the sweet and creamy flavor combo of sweet potatoes and brown sugar with the crispy, salty crunch of bacon.
Roasted diced sweet potatoes with bacon
Roasting sweet potatoes is one of the easiest ways to cook them.
To roast your sweet potatoes, simply peel and chop the potatoes, coat them with oil, and season them. Then, spread the sweet potato pieces over a baking sheet and bake for around 30 minutes.
The result is a sweet potato with a crispy exterior that’s still smooth and creamy inside.
But this delicious recipe is far from your classically roasted sweet potatoes. That’s because I throw in an unexpected, but totally delicious, ingredient – bacon.
And in addition to using crispy cooked bacon to enhance the bite of this side dish, I also use another delicious part of bacon – the grease.
Whether you cook your bacon in the oven or in a skillet, be sure to set aside a couple of tablespoons of bacon grease for roasting your potatoes. Trust me, you’ll be happy you did!

Recipe for roasted sweet potatoes with bacon
The first step to making this yummy side is to prepare your bacon. Make sure your bacon is cooked nice and crispy, then let it cool and chop it into small pieces. Then, scoop two tablespoons of grease from your skillet and add it to a large mixing bowl.
Next, add your diced sweet potatoes to the bowl and stir to coat the potatoes in the grease. If you don’t have any bacon grease or would prefer not to use it, you can also coat your potatoes in melted butter or olive oil.
After the potatoes are coated in oil or grease, it’s time to add the seasoning. This roasted sweet potato recipe uses brown sugar to enhance the sweetness of the potatoes, along with a little bit of salt and pepper. To give this dish a little bit of a kick, toss in a pinch of cayenne pepper to the mix to add a little bit of heat.
Give the potatoes one more stir to make sure the seasoning is evenly distributed over the sweet potatoes. Then, grease a baking sheet with nonstick cooking spray and spread the potatoes in an even, single layer over the pan. Place the pan in a preheated oven and let them cook for around 20 minutes.
When the potatoes are beginning to brown, remove the pan from the oven and sprinkle the chopped bacon over the top. Use a spatula to give the sweet potatoes a little stir, then put them back in the oven for another 10 minutes to continue cooking. You’ll know the potatoes are done when you can easily pierce one of the sweet potatoes with a fork.
Roasted Sweet Potatoes with Bacon
Everything is better with bacon, and these sweet potatoes are no exception!
Ingredients
- 5 slices of bacon, cooked and chopped
- 5 medium sweet potatoes, peeled and cut into bite-sized pieces
- 2 tablespoons bacon grease (or melted butter)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon brown sugar
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, combine sweet potatoes, bacon grease or butter, salt, pepper, and brown sugar. Stir until the sweet
potatoes are coated. - Spread sweet potatoes evenly over a baking sheet.
- Bake for 20 minutes.
- Remove sweet potatoes from the oven and stir the pieces around the baking sheet.
- Top with chopped bacon and return to the oven for 10 minutes.
- Before serving, stir sweet potatoes and bacon to coat with the glaze on the pan.
